Black Bean Sauce Chicken ~ 黑豆酱鸡

 


This is an easy peasy chicken dish to whip up in the kitchen which can pair well with plain white rice or plain congee.  Ingredients are not complicated and mostly available in the kitchen, but it's best to season the chicken first before stir frying them.




Black Bean Sauce Chicken   ~   黑豆酱鸡
Ingredients
  • 450 gm  chicken, cut into bite size (whole leg of chicken and breast)
  • 2 tsp black bean sauce
  • 4 pips of garlic, chopped
  • 1 big onion cut into wedges
  • 1 chilli, chopped
  • 1 small Carrot, cut into slices
  • Curry leaves
  • Bit of sugar to taste
Method
  1. Season the chicken with a pinch of salt.
  2. Saute the chopped garlic with the curry leaves and black bean sauce till fragrant.
  3. Add in the seasoned chicken, stir fry and sprinkle on some water if the dish is too dry.
  4. Simmer till chicken is cooked and tender.
  5. Add in the sliced carrot and onion wedges.  Fine tune to taste with a bit of sugar.
  6. Toss in the chopped chilli.
  7. Dish up to serve.

Mui Choy is preserved mustard greens and there are two types, one is salty while the other is sweet.  There are many ways of cooking mui choy with pork belly.  Instead of braising, you can steam it with minced pork but here I am using only the sweet mui choy and I braised the pork belly with it.  This is a flavourful dish and you can serve it with plain rice or plain porridge. Herbal Jelly ~ Gui Ling Gao

H erbal Jelly ~ Gui Ling Ga o literally translated means 'Tortoise Jelly' is one of my family's favourite desserts.  It's much more economical to prepare this at home for you'll need to fork out between Rm 9 to Rm 11 for a bowl of this cooling dessert in any of those herbal tea outlets.  This soothing jelly, served chilled, is supposed to be able to help reduce our body heat, helps to get rid of toxins and is believed to be good for the skin thus culminating a healthier complexion.
