Carrot Walnut Cake with Spelt Flour ~ 胡萝卜核桃蛋糕
Ingredients
- 115 gm wholemeal spelt flour
- 113 gm self-raising flour
- 140 gm soft or dark brown sugar
- 4 large eggs
- 70 gm walnuts, chopped
- 70 gm sultanas, chopped
- 300 gm (about 2 medium size) carrots, grated
- Zest from 1 orange
- 1 cup vegetable oil
- 1 tsp baking powder
- 1 tsp cinnamon
- a pinch of salt
- Icing sugar for dusting (optional)
Method
- Line an 8 inch square pan with parchment paper.
- Sift self-raising flour with baking powder, salt. Whisk in the spelt flour to mix well.
- In a mixing bowl, whisk eggs, oil and sugar till creamy.
- Fold in the flour mixture in 3 batches, mix well.
- Mix in the chopped walnuts, sultanas and orange zest, mix well.
- Finally add in the shredded carrots. Mix till well incorporated.
- Pour batter into the prepared pan, level the surface.
- Lightly tap the pan on the work top.
- Bake in a preheated oven @ 180 deg.C for about 45 to 50 mins. Test with a skewer till it comes out clean.
- Remove from oven and let cool in pan for about 10 mins. before removing and cooling it completely on a wire tray.
- Dust with icing sugar before serving, if desired.
