Gluten-free hazelnut orange cake ~ 无麸榛子香橙蛋糕
Ingredients
- 6 large egg yolks
- 200 gm hazel nut meal
- 140 gm caster sugar
- 60 ml orange juice
- Zest from 1 orange
- 6 egg whites
Method
- Prepare a 9 inch round nonstick springform pan, line the base, grease and dust the sides with flour.
- Separate the egg yolks and whites.
- Whisk the egg yolks with sugar till creamy and the colour much lighter, until the ribbon stage.
- Add in orange juice.
- Sieve or mix the hazel nut meal into the egg yolk mixture and mix till fully incorporated into the batter.
- Beat egg whites till stiff peaks.
- Fold in 1/3 egg whites lightly, mix well, followed by the remaining egg whites.
- Pour the batter into the prepared pan, shake the pan a bit to even out the surface.
- Bake in a preheated oven @ 170 deg.C for 40 mins. till golden brown. Test with a skewer till it comes out clean.
- Remove the cake from the oven, let cool on a wire rack before unmoulding.
- Slice up the cake and serve with a dusting of icing sugar.
Note : Can substitute hazel nut meal with almond meal.
For an 8 inch springform round pan :-
4 egg yollks, 150 gm hazelnut or almond meal, 100 gm caster sugar, 40 ml orange juice, zest from 1 orange and 4 egg whites.
