Rice cooker chicken rice



This is what I cooked for the weekend.  An easy super duper all-in-one dish accompanied with a vegetable soup on the side.  I was just too lazy to whip up any other dishes as the weather is so super hot and humid these days and my brain cells couldn't function properly.  So, as long as it can fill the stomach, it's all that matters!




The slices of red meat is sweet  'kwai fah yoke'.







If you're hard pressed for time, can consider this option for a quick and wholesome meal.

Recipe for Rice cooker chicken rice

Ingredients

  • 3 chicken leg, skin removed and cut into bite size
  • 1 piece sweet meat ~ 'Kwai Fah yoke' cut into bite size
  • 7 pieces Chinese mushroom, soaked, stemmed and sliced
  • 1  Tbsp oyster sauce
  • 1/4  tsp dark soya sauce
  • 1/2  tsp seasalt
  • 2  tsp light soya sauce
  • 1/2 tsp sugar
  • Dash of pepper
  • 1  rice cup rice
  • Chopped spring onions
Seasoning to mix in after the rice has been cooked
  • 1 Tbsp Shaoxing wine
  • 1 tsp sesame oil and 1 tsp dark soya sauce
Preparation
  1. Mix all the ingredients above except the rice, let it sit for an hour or so.
  2. Cook rice the usual way in the rice cooker, but reduce the water slightly.
  3. When the rice is 3/4 cooked and water is showing signs of drying up, add in the marinated chicken.
  4. When the rice is fully cooked and the 'keep warm' button is lighted up, add in the seasoning.
  5. Mix well, test for desired taste, dish up in bowls.
  6. Garnish with chopped spring onions, add in a dash of pepper.
  7. Serve.

  3. I cook this pretty often but I used Blessed Homemaker's recipe. Next time I will try yours. What is 'Kwai Fah yoke'?

    1. It's a piece of flat sweet meat, popular during CNY. You can substitute with Chinese sausages. You can see it in the above picture.

    Will your rice stick to the side and base of the rice cooker? I always scope up about more than a quarter bowl at the end of the day. May I know how to pretend this from happening. Thanks

    1. I'm using a non-stick rice cooker, so I don't encounter that problem.

  7. Ah yes... this is one super-duper easy dish that I cook occasionally. The only difference is I use Chinese sausages instead of 'Kwai Fah Yoke'.

  9. yeah, sometimes will cook this too..fast and nice! sometimes will also add in salted fish if have it at home. It's really so hot for the past month..sometimes dont even feel like cooking anything..even if eat out, must go to places with air con:D

    1. Yes the heat is getting on my nerves. Adding in salted fish is more fragrant but unfortunately not appreciated amongst my family members.

Mui Choy is preserved mustard greens and there are two types, one is salty while the other is sweet.  There are many ways of cooking mui choy with pork belly.  Instead of braising, you can steam it with minced pork but here I am using only the sweet mui choy and I braised the pork belly with it.  This is a flavourful dish and you can serve it with plain rice or plain porridge. Braised Pork Belly with Mui Choy   ~    梅菜焖五花肉 Ingredients  400 gm pork belly cut into bite size 100 gm  preserved sweet mui choy 3 cloves of garlic 2 slices ginger Seasoning for the pork belly 1 Tbsp dark soya sauce 1/4 Tbsp sugar 1/4 Tbsp sesame oil 1/4 Tbsp oyster sauce 1/2 tsp pepper 1/8 tsp light soya sauce Method Season the pork belly for about an hour or more.  Set aside. Herbal Jelly ~ Gui Ling Gao

H erbal Jelly ~ Gui Ling Ga o literally translated means 'Tortoise Jelly' is one of my family's favourite desserts.  It's much more economical to prepare this at home for you'll need to fork out between Rm 9 to Rm 11 for a bowl of this cooling dessert in any of those herbal tea outlets.  This soothing jelly, served chilled, is supposed to be able to help reduce our body heat, helps to get rid of toxins and is believed to be good for the skin thus culminating a healthier complexion.

T is the festive season again and the all-time favourite for X'mas is undoubtedly the ubiquitous fruit cake.  This Yoghurt Fruitcake caught my eye when I was browsing through a Food and Travel magazine.  As I've never baked a fruit cake with yoghurt before, I was very eager to try.
