I bought a Friand mould baking pan @ the Boxing Day sale and couldn't wait to try out making these .... Blueberry Friands. A friand is a small moist cake made with almond meal and flour which originated from France. I made these from a recipe adapted from Exclusivelyfood.com.au and the verdict .... not too sweet but moist and soft friands, tasted somewhat like muffins and all finished within 30 mins.!
These taste best when eaten warm, but you can store them in an air-tight container for a few days and reheat when you want to enjoy them (i.e if you have any leftover) ..... believe me they're really delicious!
Ingredients (Makes 9 Friands)
- 100 gm butter, melted
- 4 egg whites
- 45 gm plain flour
- 140 gm icing sugar (I used only 120 gm)
- 85 gm almond meal/ground almonds
- 40 gm fresh blueberries
- Icing sugar for dusting (I omitted this)
- Melt the butter and set aside.
- Beat the egg whites till frothy only.
- Sift the flour, icing sugar and almond meal onto the egg whites.
- Stir till well combined.
- Mix in melted butter.
- Scoop 1/2 batter into the lightly greased and flour dusted mould, add in about 3 to 5 blueberries, cover with more batter till 3/4 full.
- Bake in preheated oven @ 180 deg C for about 20 to 25 mins., till golden brown. Test with skewer till it comes out clean.
- Serve warm. Dust with icing sugar if desired.
