My children presented me with a Bundt cake tin for my recent birthday and I've been thinking of what cake to make with it. The shape is a bit different from the usual Bundt tins and it's fairly high........ so finally, I decided on a Green tea Chocolate cake.
I didn't swirl the batter to give it a marble effect as I wanted to see patches of colours for a change. .... so I just loaded on the batters alternatively and let nature takes its course,
The end result wasn't too bad but think the green tea colour is not distinctive enough but then that's the only green tea powder that I could get from the speciality shop.
I like the taste of Green tea and this cake will sure pair well with a cup of hot Green tea!...... Want to try, join me!
Ingredients
- 16 oz self-raising flour
- 12 oz butter
- 9 oz caster sugar
- 6 eggs - separated
- 4 oz bittersweet couverture (cooking chocolate) - melted
- 4 Tbsp milk
- 2 Tbsp green tea powder
- 1 tsp vanilla
- A pinch of salt
- Icing sugar for decoration - optional
Method
- Sift flour with a pinch of salt, set aside.
- Melt the chocolate with the milk, set aside.
- Whisk the egg whites till stiff, but not dry, set aside.
- Cream the buter with sugar till light, fluffy and creamy, add in the egg yolks one at a time, mix well.
- Fold in the sifted flour, mix well and add in the vanilla essence.
- Fold in the egg whites and mix till well incorporated.
- Divide the batter into 2. Add in the chocolate mixture into one batter, mix well.
- Sift in the green tea powder into the other, also mix well.
- Spoon batters alternatively into the lightly greased and flour dusted bundt tin.
- Bake in preheated oven @ 180 deg C for 50 to 55 mins. Test with skewer till it comes out clean.
- Cool cake in tin for about 10 mins. before removing the tin and let it cool on a wire rack.
- Sift on icing sugar generously if desired.
I'm submitting this post to Aspiring Bakers # 2 : Christmas! (Dec. 2010). It doesn't look like a cake for the festive season but then with the icing sugar decor, it does resemble a bit like snow drops. Anyway, it's up to the organisers/hosts to decide.
