Oaty Crisps


I was doing a stock-take of my fridge and chanced upon a packet of mixed cereals tucked in an inconspicuous corner.   It must be some leftover.  A hurried check on the expiry date revealed that it's still edible.  So, I flicked through my recipe collection, subtract, add, tweak a bit and came up with these healthy cookies which I'll simply name, 'Oaty Crisps'.














These cookies are crispy on the outside and a little chewy on the inside and they are packed with wholesome  nutrients.  As the festive season is not too far away, I suppose this recipe will come in handy for X'mas too!

Ingredients
  • 4 oz plain flour
  • 4oz butter/margarine
  • 3 oz mixed cereal  OR  any type of dried fruits, nuts and seeds
  • 3 oz rolled oats
  • 3oz caster sugar
  • 2  Tbsp golden syrup
  • 1/2  tsp bicarbonate of soda
  • 1/2  tsp vanilla
  • a pinch of salt
Method
  1. Sift flour, salt and bicarbonate of soda in a mixing bowl, set aside.
  2. Mix in the rolled oats and mixed cereals.
  3. Combine golden syrup and butter in a saucepan, heat and keep stirring till butter melts.
  4. Pour in the melted butter/golden syrup mixutre into the flour mixture, and mix thoroughly.
  5. Roll mixture into balls, the size of a walnut.
  6. Place them 2 inches apart on a parchment lined baking tray, press lightly with the palm of your hand.
  7. Bake in preheated oven @ 150 deg C for about 12 to 15 mins. or till golden brown.
  8. Remove from oven and let cool on tray for 5 mins. before transferring them onto a wire rack to cool completely.
  9. Store these cookies in an air-tight cookie jar once they are completely cooled.
  10. Makes 24 cookies.

  6. agree, this really packed with all the wholesome nutrients..i like that..especially if i want to lose some weight,,just 2 or 3 pieces of this will make my lunch, haha!

Mui Choy is preserved mustard greens and there are two types, one is salty while the other is sweet.  There are many ways of cooking mui choy with pork belly.  Instead of braising, you can steam it with minced pork but here I am using only the sweet mui choy and I braised the pork belly with it.  This is a flavourful dish and you can serve it with plain rice or plain porridge. Herbal Jelly ~ Gui Ling Gao

H erbal Jelly ~ Gui Ling Ga o literally translated means 'Tortoise Jelly' is one of my family's favourite desserts.  It's much more economical to prepare this at home for you'll need to fork out between Rm 9 to Rm 11 for a bowl of this cooling dessert in any of those herbal tea outlets.  This soothing jelly, served chilled, is supposed to be able to help reduce our body heat, helps to get rid of toxins and is believed to be good for the skin thus culminating a healthier complexion.
