Banana Prune Cake



This cake is full of  nutrition and the fibre in the banana and prunes will certainly bring relief to those who have symptoms of constipation!











I was just trying luck with this combo and was extremely pleased with the result ..... moist and soft!

Ingredients
  • 300 to 350 gm (without skin), over-ripe bananas, mashed
  • 150 gm butter/margarine
  • 50 ml vegetable oil
  • 90 gm brown sugar
  • 300 gm plain flour
  • 2 eggs
  • 80 gm pitted prunes, cut and coated with some flour from recipe
  • 2 flat tsp baking powder
  • 1/2 flat tsp bicarbonate of soda
  • 1/2 tsp vanilla
  • a pinch of salt
Method
  1. Cream the butter with the sugar till light, creamy and thick.
  2. Add in eggs one @ a time, mix till well incorporated.
  3. On low speed add in the oil followed by the mashed bananas and vanilla, mix well.
  4. Fold in the flour, mix well.
  5. Finally, add in the flour coated prunes, mix thoroughly, scraping from the bottom and sides of the mixing bowl.
  6. Pour into a lightly greased and floured 8 inch sq. tin and bake in preheated oven @ 180 deg C for about 50 to 55 mins.  Test with a skewer till it comes out clean.
  7. Cool in tin for about 10 mins. before removing onto wire rack to cool completely.

    You can add a topping of icing sugar and lime juice, or just dust with some icing sugar.

Herbal Jelly ~ Gui Ling Gao

H erbal Jelly ~ Gui Ling Ga o literally translated means 'Tortoise Jelly' is one of my family's favourite desserts.  It's much more economical to prepare this at home for you'll need to fork out between Rm 9 to Rm 11 for a bowl of this cooling dessert in any of those herbal tea outlets.  This soothing jelly, served chilled, is supposed to be able to help reduce our body heat, helps to get rid of toxins and is believed to be good for the skin thus culminating a healthier complexion.

T is the festive season again and the all-time favourite for X'mas is undoubtedly the ubiquitous fruit cake.  This Yoghurt Fruitcake caught my eye when I was browsing through a Food and Travel magazine.  As I've never baked a fruit cake with yoghurt before, I was very eager to try.
