Apple Slice




Attempted this  'Apple Slice' with some green apples that had been sitting in the fridge, nearly half forgotten!



Spread half the cake  batter onto a prepared cake tin, arrange the apple slices on top of the batter.
Sprinkle on some brown sugar and cinnamon.  Then cover with the remaining cake batter, spread well before putting into the oven.






Although the apple slices have been baked, yet they were still a wee bit crunchy.  The slight sourish taste did blend well with the not too sweet moist cake.  Will pair well with a hot cup of tea or coffee!

Ingredients
  • 6 oz plain flour
  • 6 oz  butter
  • 3 oz caster sugar
  • 2 eggs
  • 3 medium size green apples - peeled, cored and sliced
  • 1.1/2 flat  tsp cinnamon powder
  • 1/2 tsp vanilla
  • Some brown sugar
Method
  1. Line a 9 inch sq. spring form tin, set aside.
  2. Cream butter and sugar till light, thick and creamy, add in eggs one at a time.
  3. Stir in sifted flour and 1/2  tsp cinnamon powder.
  4. Spread half the batter over the base of the lined tin.
  5. Place the sliced apples on top of the batter, sprinkle in some brown sugar and remaining cinnamon powder.
  6. Spread the remaining batter evenly over the apple slices.
  7. Bake in preheated oven @ 180 deg C for about 10 mins. or till light golden brown.
  8. Cool in tin for about 10 mins. before cutting up into squares/rectangles, as desired.

  3. That looks good! I have done something similar before, except I mixed the apples into the batter and after baking, drizzle some lemon icing over it.

  4. I know that apple slice is no longer a widely popular dessert, but when I was a child everyone ate it. I have a recipe on my blog for it as well. It can be tricky to do because of the sweetness or lack thereof in the apples. Mine is not always successful. Years ago it was served with a thick layer of confectioners' sugar icing.   10. I have this habit of buying nice apples even though no one at home is eating it and it will end up getting old and wrinkle in the fridge. This will be great dessert to bake with it.

Herbal Jelly ~ Gui Ling Gao

H erbal Jelly ~ Gui Ling Ga o literally translated means 'Tortoise Jelly' is one of my family's favourite desserts.  It's much more economical to prepare this at home for you'll need to fork out between Rm 9 to Rm 11 for a bowl of this cooling dessert in any of those herbal tea outlets.  This soothing jelly, served chilled, is supposed to be able to help reduce our body heat, helps to get rid of toxins and is believed to be good for the skin thus culminating a healthier complexion.
