Minced pork with mixed vegetables aka 4 Heavenly kings .......... so this dish must be fit for a king! No, no, it's only a simple stir-fry dish of mince meat and 4 types of vegetables of your choice. The heavenly kings refer to the 4 Canto pop singers of Hong Kong and I really have no inkling how this name came about.
This dish is normally cooked with sambal belacan and it should be slightly spicy. However, in this case I tweaked it a bit and used preserved bean paste and served it with plain white porridge ......... simply delectable!
I used 4 angle beans, long beans, okra and brinjal with a little bit of red chilly for colour.
Also some dried shrimps, minced pork which has been marinated and some chopped garlic.
A simple dish of stir-fried vegetables, crispy and crunchy fit enough for a King!
Recipe for Minced pork with mixed vegetables aka 4 Heavenly Kings
Ingredients
- 170 gm mince pork
- 15 gm dried shrimps
- 5 pips garlic, chopped
- 140 gm brinjal
- 50 gm okra
- 90 gm 4 angle beans
- 80 gm long beans
- 1 red chilly
- 2 tsp preserved bean paste - 'tau cheong'
- Oil for frying
- 1 tsp cornflour
- 1/2 tsp salt
- 1 tsp sugar
- 1 tbsp oyster sauce
Preparation
- Cut up the brinjal, long beans, okra and 4 angle beans into bite size.
- Saute the chopped garlic with some oil till fragrant, add in the dried shrimps, preserved bean paste and the mince pork, stir-fry.
- Once the pork is semi cooked, add in the brinjal and sprinkle in some water when the dish is too dry.
- Stir-fry till the brinjals are a bit soft, then toss in the long beans followed by the okra and finally the 4 angle beans, sprinkling in more water when necessary. Toss in the cut chilly as well.
- Add salt, sugar and light soya sauce to taste.
- Dish out and serve with rice or plain white porridge.
