Recipe for Ipoh Bean Sprouts Chicken
Ingredients
- 800 gm whole free range chicken
- 300 gm 'Hor Fun' aka Rice Noodles - 3 servings
- 20 gm young ginger, julienned
- 60 gm shallots, sliced
- 200 gm Bean sprouts
- 1 chicken frame
- Salt to taste
- Light soya sauce and sesame oil
1 red chilly, sliced
1 cucumber, sliced
spring onions, chopped
Preparation
- Boil a pot of water enough to submerge the whole chicken. Once boiling, put in the chicken, lower heat to medium, close the lid and let chicken cook for about 10 mins.
- Turn off heat and let chicken remain in the pot for another 10 mins.
- Remove chicken and immediately immerse the chicken in a basin of cold water for about 5 mins. Keep the pot of stock as broth for the rice noodles.
- Take out the chicken, drain off water and let chicken cool, set aside.
- Heat up the pot of stock, add in the chicken frame and let it boil for about 1/2 an hour or more, till the stock is reduced to half. There's no need to remove the chicken frame, just lower the heat to the minimum.
- Meanwhile, cut up the chicken, arrange them on a bed of cucumber slices. Drizzle in some light soya sauce, garnish with chopped spring onions, chillies, add in a dash of pepper.
- In a pot of boiling water, cook the rice noodles for about 1 min. till they are translucent. Dish out, drain and put in a bowl, ladle the hot broth, garnish with spring onions and a dash of pepper.
- In the same pot of boiling water, blanch in the bean sprouts for about 10 secs. Dish out, drain off water and place on a plate. Add light soya sauce, drizzle in some sesame oil, dash of pepper and some chillies.
- Now, the whole 'meal' of Ipoh Bean Sprouts Chicken is complete ......... Serve!

ReplyDeleteThat's such a lovely meal. I love that steamed chicken. It reminds me of chicken rice.....mmmm....soooo delicious. Love the bean sprout too. I'm sure my family would like that though I know my children will not have the dip. They don't like to see slices of raw shallots.

Yup, that chicken is the same for Hainan Chicken rice. Love that too especially with the right chilli sauce. Raw shallots is good too for lowering cholesterol level.
