I recently made this for my girl who will only insist on eating muffins that have loads of choc chips and raisins - an ideal accompaniment to go with afternoon tea, too.
Recipe for Choc Chip Raisin MuffinIngredients :
- 9 oz Plain/All Purpose flour
- 4 oz Caster Sugar
- 3 Teasp. Baking Powder
- 1/4 Teasp. Salt
- 2 Eggs
- 1/2 Cup Cannola/Corn Oil
- 1/2 Cup Milk OR Sugarless Soyabean Milk
- 1 Teasp. Vanilla
- 80 gm Raisins
- 80 gm Choc Chips
Method :
1. Sift the plain flour with the baking powder and salt. Mix in the sugar thoroughly. Set aside.
2. Lightly beat the eggs, blend in the oil, soyabean milk, vanilla, and mix well.
3. Add the liquid ingredients to the dry ingredients, stir quickly till just moistened.
4. Fold in lightly the raisins and choc chips.
5. Spoon into well greased muffin tins or paper-lined muffin cups.
6. Bake in preheated oven @ 400 deg.F/200 deg.C, for about 25 minutes until golden brown and test with a skewer till it comes out clean.
7. Remove to wire rack to cool. Best serve warm.
Variation :
Choc Chip Raisin Yoghurt Muffins
Omit the milk and substitute with plain yoghurt. Reduce baking powder to 1 teaspoon and add 1/2 teaspoon baking soda.
